This may be partly my fault I won’t lie, as I am also obsessed – I much prefer these sort of cakes in comparison to regular fondant covered cakes as I love chocolate and frostings and all things delicious. You can have so much fun with the decoration on a drip cake, especially when its at easter and you can make it into a mini egg cake. Mini eggs are perfect on mini cupcakes because they appear larger on top of them. These are also the perfect size for kids as a treat.

Cupcakes - you can buy cupcakes from the grocery store, use a cake mix, or make homemade vanilla cupcakes. You could also use chocolate cupcakes instead of vanilla. Childish as it may sound, cutting the cupcakes in half to reveal the hidden creme eggs is so exciting. It's like opening a Kinder surprise egg, you can't wait to see what's inside.While the almond buttercream and chocolate layer cake are perfection simply on their own, I think we need to spot light this insane Cadbury creme ganache filling inside. I never thought I would melt down 8 large Cadbury creme eggs and turn it into ganache but it had to have been one of the best choices I have ever made. I’m not huge on big Cadbury creme eggs on their own. Mostly because I can never finish them because they are just so rich ya know?! When you melt them down and add in heavy cream it creates the most luscious, silky unique filling. Paired with cake it is beyond wonderful. Store bought cake mixes will make approximately 60 mini cupcakes. You may have some mix leftover you can use to bake extras with. So Easter baking season is well underway, this year I’ve found myself a little obsessed with these gorgeous sugar-shell coated chocolate mini eggs. Perfectly bite-sized, these are fab little chocolate morsels perfect for just munching on, but I love incorporating them in my bakes too! If you feel like your oven temperature might be the problem, invest in an oven thermometer to get a more accurate reading.

Chocolate Cake: Well, to be fair you could use any flavor cake – but my favorite is chocolate. I’m using 4 cake layers that are 5” in diameter and 1” tall. Since it’s Easter, and I’m in a rush, I’ve cheated and bought a couple of mud cakes from my local supermarket. If you have time, do make your own (the cake will taste better). If your ganache isnt fully melted after the mixing the chances are that the cream wasn’t hot enough – heat it for 10 seconds at a time in the microwave until its smooth. Its important to leave it to cool before decorating the cake otherwise it might melt the cake. Small round cookie cutter: you’ll need something like this to cut a circle out the middle of the cake. I’m using an expresso glass, because it’s about the right size and I already had this at home. We top this Mini Eggs Easter cake with chocolate frosting and Cadburys Mini Eggs. I use ready made Cadbury Chocolate Icing but you can always make your own chocolate buttercream frosting or ganache if you want to. You could also cut the cake in half lengthways and add a layer of frosting in the middle too – or even vanilla buttercream for a nice flavour combination – and create a simple Easter layer cake.

First, for your cake layers you'll need a kitchen scale to measure out your dry ingredients. I also recommend using a stand mixer if you have one. If not, a hand mixer will work too.

Self raising flour: I use self raising flour for this bake, for a lighter cake. If you don’t have self raising flour, add an extra ½ tsp baking powder to plain flour instead.

Preheat. Preheat your oven to 350°F (175°C) and grease your 12-cup bundt pan using the butter and flour combo. *Apply the butter generously using a paper towel, then add 1-2 tablespoons flour and roll to coat all of the buttered surfaces. be sure to get into all the ridges of your bundt pan.
