Humidity introduces moisture in the air, which might cause your melted candy to seize. Unfortunately, it’s hard to save melted candy once this happens. One possible solution would be to add your candy to a recipe that actually requires moisture, such as our Candy Melts Ganache and Truffles, which uses heavy whipping cream. Double Boiler: The double boiler method uses steam to melt your candy and is great if you’re planning to melt large amounts.

Coconut oil is a great option as it is a solid when room temperature (pending that you are in a room that is 75 degrees or cooler!). Coconut oil will, of course, add a slight coconut taste so keep that in mind when stirring it into your candy melts! Let your melted candy stand in the microwave for 30 to 60 seconds before removing. This lets the residual heat from the bowl or bag melt any remaining candy. Continue stirring or kneading to better distribute any residual heat. When candy is nice and smooth, it’s ready to use. After you have melted your candy melts according to the directions, add a teaspoon of shortening and stir it into the melted chocolate. Keep adding one teaspoon at a time until you reach your desired consistency. To use EZ Thin, simply add 2 tablespoons of crystals to 12 oz. melted candy. Stir until completely incorporated. If you’re using less than 12 oz. of melted candy, start with a small amount of EZ Thin, then continue adding until you achieve the correct consistency. Make sure not to overheat your candy by melting on too high of a setting or for too long; it will lose its consistency if it is overheated or if liquids are addedHeat the candy melts in the microwave for about 1 minute. The microwave should not be on a high-power setting. We recommend using only 40-50% power. Once melted, these candy melts will solidify again after a while. And, if immediately placed in the fridge or freezer, this time frame will shorten drastically. Molded candies can be used to top cakes and cupcakes, or just enjoyed on their own! You can even fill them with candies, nuts, chocolate or peanut butter. Marbling If you’re new to the candy melting game, break out your double boiler. It’s super simple and helps candy melt to a nice, smooth consistency. Just fill the lower pot with 1 to 2 inches of water, making sure it won’t touch the bottom of the top pot. Bring the water to a simmer, then remove from the heat. Place top pot on lower pot, add Candy Melts candy and stir constantly until mostly melted. Remove top pot or bowl from heat, letting residual heat melt the smaller pieces. Candy Melting Pot

If you don’t have EZ Thin on hand, you can also add a small amount of solid white vegetable shortening, using the same technique of starting with a small amount and adding in more as needed. To coat cake pops, we suggest using a Candy Melting Pot, then thinning your candy with EZ Thin. This will help ensure your candy stays at the right consistency from the first pop to the last. Dipping and DrizzlingThe marble effect looks great on everything from cake pops to donuts. All you need is one main color (often Bright White) and a few highlighting colors (Drizzle Pouches are great for this).

So, when storing melted candy melts, your best option is to either place them inside of a decorating bag or a plastic stain and odor-free container. Both are easy to reheat and use the melts again. From dipping cake pops to molding your own candies, Candy Melts can be used in all kinds of ways. Candy Melts for Cake PopsYou can also thin out your melted candy with solid vegetable shortening (2 tablespoons per 12 oz. bag). Do not use liquid vegetable oil, butter, milk, water or any other liquid to thin your candy. These will all cause your candy to break or seize, rendering it unusable. This can also happen if your candy is burned or overheated.
