I used gluten free Lundberg Short Grain Brown Rice and didn't have any problems with absorbing the liquid. More recently, I came across Ina Garten’s easy baked Parmesan “risotto” method that only requires a few minutes of stirring at the end.

Keep in mind brown rice takes twice as long as white rice to cook and white rice doesn’t have bran coating the endosperm, so the starch dissolves out into the broth as it cooks.

When rice is al dente to tender and quite creamy, stir in Parmesan cheese, butter and salt and ground black pepper to taste. Let your pressure cooker do the heavy lifting, cooking the rice in a fragrant mixture of white wine, vegetable broth, herbs, and aromatics.

The grains eventually made their way to the colonies and to Jefferson's own estate, where they were planted without success. I freeze small portions in silicone muffin cups for my kids, and larger portions in empty yogurt containers or in silicone freezer bags.

The first time I hadn't realised that you need to soak it overnight but even after doing that, I spent hours cooking and still it was only al dente at best and horrible! Note that it will thicken considerably as it cools, so you may want to add a splash of vegetable broth when you reheat it. Brown Arborio Rice can still be used in traditional risotto preparations, but benefits from a quick parboiling before toasting and cooking in broth for the classic dish.

I mixed shitakes and button mushrooms, i didn't have pecrino, so i just used parm and a little fresh dill.
