NOSE: Fermentation in stainless steel tank allows the full expression of Chardonnay fruit aroma without the influence of oak or lees resulting in a bright, clean tropical fruit bouquet. Moderately active - Do light to moderate intensity exercise 3-4 times a week. E.g. going to the gym / swimming / cycling / horse riding / dance classes / playing golf. Leisure Activity Level WINEMAKING: Shiraz from selected premium Margaret River vineyards were used to make this wine. Fermented in open stainless steel tanks with twice daily pumpovers aiding fruit tannin development. Maturation in new, 1, 2 and 3 year old French oak for 12 months encouraged wine development and structural complexity. The objective was to produce an elegant Shiraz with complex aromas and characters and with texture and structure, the use of French oak instead of traditional American oak gives rise to a wine of greater sophistication.The Hay Shed Hill vineyard is situated on a picturesque property that was established as a group settlement farm for returned soldiers from the First World War. Known as Sussex Vale the property was originally a dairy farm. The current homestead, considerably renovated, still has much of the original Group Settlement look and feel. World Series/ White Label – These are wines made from grapes that are not very commonly known in Australia. Unique wines find a place in this category. Kerrigan + Berry – These are wines crafted by two expert winemakers, Gavin Berry of West Cape Howe and Michael Kerrigan of Hay Shed Hill. Vineyard Series – These wines are made from grapes grown in their main vineyard located in Wilyabrup. The vineyards of Hay Shed Hill are located in the valley of Wilyabrup, just about 5km from the Indian Ocean. Therefore, it enjoys the benefits of the sea breeze that cools it down throughout the day, even during the hot afternoons.
