For the celeriac crumb, peel the celeriac and roughly chop. Fill a blender halfway with celeriac and cover with water. Blitz for a couple of seconds at a time, until it looks quite fine. Add any remaining celeriac once the quantity has reduced and continue to blend until fine. Rinse out all the starch under running cold water. Squeeze out all the water using a clean cloth. Put in a cold pan with cold oil to cover. Bring the oil to 150°C, constantly whisk, until it starts to turn golden brown.
