We age our whiskey in a variety of casks and also create bespoke finishes for our different whiskey variants. We have specified our yeast strain, and while our fermentation and distillation take longer than most, we believe it produces an unparalleled spirit, perfect for making Irish whiskey. The Dubliner Irish Whiskey is accompanied by 2 variants; The Dubliner 10 Year Old Malt Whiskey – aged for ten years in bourbon casks and bottled at 42%; and The Dubliner Whiskey and Honeycomb – made from a base of Irish whiskey blended with honeycomb and caramel, for a smooth sweet finish. A liqueur that truly appeals to the Irish Whiskey lover; all the finest qualities of whiskey amplified with luscious honeycomb sweetness. Ideal for hosting unique and captivating events such as music performances, comedy nights, corporate functions, and more. On the second floor, our fully equipped boardroom is perfect for hosting memorable and intimate meetings, private tastings, and events.The Dublin Liberties distillery boasts six tonne mashing, triple distillation with capacity for 10k litres in the first still and 6k litres in the second and third still, and capacity to produce over 700,000 litres of whiskey annually. We didn’t get any of those to check out, but we did receive the mainline offerings, a straight-up bourbon casked Irish and, unusually, a whiskey liqueur. Our whiskey is dreamt and distilled in the heart of Dublin 8 and there’s a bit of our capital’s magic in every bottle. We source all our malt from Irish farmers and draw our water from our own well within the distillery, which fell as rainwater here over 10,000 years ago.
