It might look like a challenge to make but it’s surprisingly easy – all you need is a good set of food colouring. Place the base colour in first. Tilt the springform pan such that the base colour is able to spread almost or already to the ends and circumference of the pan. This vibrant, six-tiered rainbow creation is a guaranteed showstopper. Of course, having said so much, I have a side confession to make. I was actually pretty afraid of being pro-LGBT. Put 180g of the butter into a bowl with 180g of caster sugar, 180g flour, 3 eggs, 2 tsp vanilla extract and 20ml milk. Beat, using a hand-held electric mixer, until light and creamy. I’ve made this cake at least 3-4 times and the cupcakes, too and it’s such a winner! Thank you! It’s gorgeous and so fun. Such a fun surprise to cut into it and see what the final cake looks like inside. The flavor is light and delicious without being overly sweet! The 2 key takeaways are 1) Like it says in the recipe -Don’t over bake the cakes. Because each layer is fairly thin it only takes 10-15 minutes max to bake. 2) I reduced the amount of sugar in the frosting to only 2 cups of sugar and it’s perfect- still sweet enough without being overwhelming and still has that lovely vanilla flavor. and wonderful light flavor.

I’ve tried the liquid food colours you find in supermarkets in the past and while they look great as you make the batter, they fade in the oven. Just look at all those happy vibrant colors!! Wouldn’t you feel special if someone made this for you? Especially if you thought you were receiving just a regular ol cake? I know I would! I just tried the rainbow cake for the first time. I loved it! I think this was the best cake I’ve ever had in my life! Just do take note to stir especially well to incorporate an even, desired intensity for each of the six layers and you shall fly with the colours of the rainbow! The only precaution you should take note is that we don’t want to mix the colours or there won’t be distinct layers, or the layers will be in a sense contaminated. Which is not desirable for me because the colours of the rainbow are always distinct!
