I can see the reason for the general "don't silicone hobs" rule, but if used sparingly, why can't it replace the foam (as a water seal) and avoid the problem described above? I.e. where the cover won't sit flush because the clamps can't compress the foam and/or flex the chassis while trying.

I had my gas hob fitted today. The plumber was in a hurry and didn't get it square with the worktop and the foam was all over the place. Nice soldered joints though. This is just a guess, I would think the reason they say do not use a sealant, just in case anything goes wrong with the hob and it needs to be taken out. So to answer your question, it does seem to be heat-proof, but how much it needs to be is questionable.
